Caprasia for the ancient Iberians meant "land of goats". The Caprasia brand pays homage to a time when mountain goats inhabited the area and the Iberians practiced viticulture between the Sierra Cabrillas mountains and the Cabriel River. Our Caprasia wines come from the Alfaro Estate, in the Utiel-Requena wine-growing region. It is located 70 kilometres from the Mediterranean, in an ideal location for vines due to the diversity of its soils and orientations, as well as its elevation of up to 900 metres above sea level.
VINEYARDS
Located at an altitude of 680 metres in the Vega del Río Magro, its clay soils feature sandstone, gravel and pebbles. The Chardonnay and Macabeo are planted on trellises right next to the winery.
ELABORATION
The grape varieties are vinified separately, depending on the optimum degree of ripeness to make cava, to be destemmed and pressed directly, obtaining the free-run juice, which once clarified by applying cold, proceeds to fermentation in stainless steel tanks, at temperatures between 14º -16º for approximately 25 days; and once the two wines are mixed, the base wine is obtained to carry out the tirage and its subsequent aging in bottle, to reach the Reserve category, with a minimum of 18 months, when the disgorging begins, without adding sugar, to be able to be called brut nature.
TASTING NOTES
Clear and bright, pale lemon in colour with green highlights and abundant fine, tight bubbles. With pronounced aromas of white flowers such as jasmine and orange blossom over notes of green fruit such as apple and pear, as well as subtle hints of yeast and hay. Dry, fresh and rewarding on the palate with flavours of ripe apple, lemon-apple pear. A creamy mousse with good persistence that shows the finesse of the vintage.
