Pasamonte is the name of the plot where the vineyard is located within the Los Balagueses PDO and just behind the mountain are the first Iberian wineries excavated in the limestone rock of the s.VII aC In this plot the grapes have always been harvested separately for more than 20 years, but it is with the 2020 harvest that we have made a blend of all the varieties planted in the same plot to make an authentic single-plot wine, the mixture of different grapes each contributing its uniqueness to the final set.

VINEYARDS
The grape varieties are cultivated on trellises, in a 4-hectare enclave located in the middle of pine forests, elms, poplars and aromatic plants. The yields average 3 kilos per vine. The viticultural practices promote biodiversity and sustainability with the application of our own compost, working the vineyard with green pruning to regulate yields and avoid possible cryptogamic diseases.

ELABORATION
The grapes are harvested, destemmed and crushed for subsequent fermentation with indigenous yeast at a controlled temperature of no more than 26º. The skins and must are mixed using the delestage technique and the wine is devatted before the alcoholic fermentation is complete, thus linking with malolactic fermentation in a stainless steel tank, stirring the lees once it is complete. It is then racked into used French and Hungarian oak barrels and aged for approximately 8 months to micro-oxygenate and mature the wine.

TASTING NOTES
Color: Intense garnet red color with violet reflections once bottled.
Nose: Strong aromatic intensity of ripe red fruit, with floral, balsamic and spice notes.
Palate: On the palate, the abundant fruity character of red and black plums provides fat with acidity and sweetness in perfect balance, with slightly marked tannins. A well-balanced, structured wine with an enveloping finish.
